Carpaccio of our oxen marinated in Pomal Crianza wine, 12-month cured cheese from Galician cows, pistachio crumble and Aitaren dressing.

Txistorra’ homemade beef txistorra, migas del pastor and salsa brava.

Grilled imperial cod loin, grilled vegetables with refried bilbaína sauce.

Amaren beef sirloin with wood-grilled piquillo peppers and potato parmentier.

Grilled Amaren selection of beef steak, aged over 5 years, approx. 70 days, with garnish (1,600 kg. for 4 persons).
