Our special menus for groups are designed to enjoy a selection of representative dishes from our gastronomic offer based on the best raw materials.

MIGUEL LOSADA MENU

Carpaccio of our oxen marinated in Pomal Crianza wine, roasted red pepper gelée, Galician cow’s cheese cured for 12 months and Italian white truffle butter. Txistorra (a traditional Basque beef stew), truffled potato velouté, organic cow’s butter and flambadou flambéed bao bread with beef fat.

Imperial cod loin with pilpil made with early harvest virgin olive oil. Fillet of beef Amaren selection.

Alaskan soufflé, smoked fruits and Madagascar vanilla ice cream.

Creamy croquettes of our beef with slightly spicy Espelette peppers.
Boletus confit in savory consommé, low-temperature egg, potato parmentier au gratin and demi-glace of our oxen.
Grilled wild red tuna, coconut and marcona almond ajoblanco, wood-roasted piquillo chili jam and reineta apple gelée.

MIGUEL DE UNAMUNO MENU

Salad of hand-peeled and pickled Tudela I.G.P. artichokes, pistachio aguachile, black fig salmorejo and smoked beef bacon salt.
Roasted scallops, cherry gazpachuelo, trout roe from the Navarrese Pyrenees and essence of A.O.V.E. and plankton.
Grilled veal sweetbreads, farmhouse egg cooked at 65ºC, caramelised and smoked onion, green mojo and boletus bearnish.
